Here’s a recipe from our last curry themed lunch club

Savoy cabbage thoran

Recipe adapted from The New Tastes of India by Das Sreedharan

Serves 4

  • 2 tbsp oil, I use olive oil
  • 10 curry leaves
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1 tsp chilli flakes
  • 1 onion, finely sliced
  • 2 tbsp desiccated coconut
  • 1 savoy cabbage, shredded
  • 1 tsp ground turmeric
  • Salt
  1. Heat the oil in a large frying pan
  2. Add the mustard seeds, when they start to pop add the cumin seeds and curry leaves
  3. Add onion and cook until soft
  4. Then add in the coconut, turmeric, chilli flakes and some salt
  5. Add the cabbage and sprinkle some water on top, stir well, cover and cook on a low heat until the cabbage is cooked

This is usually served as a side dish e.g. with dahl and rice.
