Here’s a recipe from our last curry themed lunch club
Savoy cabbage thoran
Recipe adapted from The New Tastes of India by Das Sreedharan
Serves 4
- 2 tbsp oil, I use olive oil
- 10 curry leaves
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 tsp chilli flakes
- 1 onion, finely sliced
- 2 tbsp desiccated coconut
- 1 savoy cabbage, shredded
- 1 tsp ground turmeric
- Salt
- Heat the oil in a large frying pan
- Add the mustard seeds, when they start to pop add the cumin seeds and curry leaves
- Add onion and cook until soft
- Then add in the coconut, turmeric, chilli flakes and some salt
- Add the cabbage and sprinkle some water on top, stir well, cover and cook on a low heat until the cabbage is cooked
This is usually served as a side dish e.g. with dahl and rice.
